The best Bifanas in Lisbon!

I’m starving! Bifanas (pork fillet) are a Portuguese speciality, and we are entering the “BIFANA SEASON”.

When I say bifana season, I mean the yearly street partying that goes on all summer in each freguesia (burgh). When BBQs mostly made of converted metal drums are filled with blazing charcoal and on them these amazingly seasoned cuts of pork sizzle away.

Just describing this is making my mouth water.

And, if you are ever in Lisbon you can find the best bifana in town at the Cafe Beira Gare, located between Rossio and Restauradores, right before the train station.  But… that is just my humble opinion.

Ingredients:
300 grs. pork fillets
3 garlic cloves
salt and pepper
some paprika
2 bay leaves
1 litre of white wine
1/2 dl white wine vinegar
1 teaspoon of lard
Method:
Season the meat with salt, paprika, pepper, chopped garlic and brake the bay leaves in a bowl.
Drizzle with white wine and vinegar, mix and allow to marinate for a few hours.
Melt the lard in a frying pan until hot. Place the pork fillets  in to the hot lard and turn every couple of minutes until well cooked. Add the remaining marinade into the frying pan and allow to boil and reduce.
All done! Open the bap and make your bifana sandwich.
DON’T FORGET THE MUSTARD (molhenga)!!
